We specialise in raising food safety and health & safety standards in Scotland by providing cost-effective training and consultancy for food businesses in Edinburgh and the Lothians, Borders. Fife and East Central Scotland. Our trainers are highly experienced and qualified. Education is a priority for any company and we strive to offer the highest possible standards. Flexible training is available to suit the needs of businesses and organisations where food is a priority. All courses can also be run over weekends, evening or half days on your premises to suit your organisation. Money and travel time can be saved.

Certification
The Royal Society for Public Health (RSPH) covers the syllabus to meet the demands of the food industry and aimed at food handlers in the catering and hospitality industries working with unwrapped or open foodstuffs - sometimes called 'high risk' foods.
Holders of qualifications based on this specification will have a knowledge and understanding of; the importance of food hygiene, associated food hazards, good hygiene practice and controls based upon an awareness of food safety management systems.
These topics are regarded by the Food Standards Agency as being important to understanding and maintaining good practice in the handling, processing and preparation.

Foundation Certificate in Food Hygiene
Course content:
Food Hygiene Direct supports the " Scores on doors" initiative : According to a survey by Food Solutions, 97% of consumers and over three quarters of small food businesses support publicising hygiene scores for food premises. In Scotland, where a pass/fail pilot 'scores on doors' has been running for a number of years 89% of consumers and 68% of businesses believe that the scheme will raise hygiene standards and build business.
Training with Food Hygiene Direct for this nationally recognised certificate will help your staff, give your customers confidence and help build your business.
To achieve this qualification a candidate must:
Demonstrate how individuals should behave responsibly within food safety procedures
Identify personal hygiene procedures
Outline how to keep the working area clean and hygienic
Explain how to receive and store food safely
Describe how to prepare, cook, hold and serve food safely
Assessment
Examination is by multiple choice 30 questions candidates have to achieve 20 correct answers to pass
The fee covers everything: including handbook, tuition, exam and certification.

Introduction to Food Hygiene Awareness (1/2 day course 3 hours)
Bespoke courses from £250 maximum 15 candidates. Includes certificate of attendance and handouts
For: Full time staff at induction (or within the first 4 weeks) or part time & casual staff (within 8 weeks of employment). For category A food handlers, i.e. Care staff including domestics and cleaning staff. Waiting staff, servery assistants, counter staff, and bar staff (whether involved in food preparation or not)
Foundation Certificate in Food Hygiene (1 day RSPH course 6 hours)
This nationally recognised accredited course is exceptional value at £550 per course for a maximum of 12 candidates. Includes RSPH Certificate, course handbook an comprehensive set of handouts.
Requirement for staff who are 'Food handlers' (i.e. Category B food handlers: preparing open, unwrapped and 'high risk' foods) within 3 months of employment. Providing a nationally recognises Certificate
(Introduction to Food Hygiene Awareness training should be carried out in the interim).
